How the Microwave Steam Method Works
Starch molecules in bread lose moisture over time, causing the crumb structure to harden. Reintroducing controlled heat and steam restores starch elasticity instantly.
- Dampen a Paper Towel: Lightly wet a paper towel with cold water and wring out excess liquid so it remains damp, not dripping.
- Wrap the Bread: Wrap the stale slice or roll loosely inside the damp paper towel.
- Microwave briefly: Heat on high for 10 to 12 seconds. The trapped moisture converts into steam, softening the bread while recreating a soft interior.
Oven Method for Whole Baguettes
